So I thought I'd try something a little different today and do a baking post. I have recently started to bake a lot more as I seem to have a lot more spare time on my hands, I decided this would be a chance to share with the blogisphere one of the recipes I've been baking recently. For those who don't know what a Madeira cake is, it's basically a normally fluffy sponge with a hint of lemon, it's kind of a hybrid of a normal sponge cake and a lemon drizzle cake.
TO START YOU'LL NEED:
- You'll need to preheat your oven to 160oC/ 325oF, if you have a gas oven it'll be gas mark 3. Also You need to grease a tin with a diameter of about 7 inches (it's fairly easy to get your hands on one). Also preferably it needs to be fairly deep as well.
- Cream the butter and sugar together until they are fluffy. Then add the lemon rind (btw this is a pain in the arse to grate so you may want to prepare your rind before this step. Mix it all together.
- Now add your beaten eggs GRADUALLY. You then add the flours. you can sift them if you want it just means the mixture is a bit less lumpy.
- Now the fun part. Carefully spoon the mixture into the case without getting it all over your kitchen and smooth it over if you want to make it look especially pretty.
- Bake in your preheated oven for 1- 1 1/4 hours it should be a well risen, golden lovely sponge.
- leave to cool or if you're my brother eat it while you get the camera to take photos.
